Beef shin

Beef shin, also known as beef shank, is a cut of meat taken from the lower leg of a cow, both the front (foreshank) and back (hindshank). This cut is known for its rich flavor and tough texture due to the presence of connective tissues and muscles that are well-developed from the cow's constant movement. When cooked slowly, these tough tissues break down, resulting in tender, flavorful meat.
